Eggchef Cooking Rules

All items must be finished on a Big Green Egg. Eggchefs must follow FoodSafe guidelines and ensure that the protein temperature has not been between 41-135 degrees Fahrenheit for more than four hours. The internal temperature must reach between 145 degrees whole or 155 degrees when injected.

What to bring?

Cooks are required to bring all ingredients required for your dishes. This includes all your own food, plus what you need to cook, such as:

  • Cleaning Supplies
  • Cutting Boards
  • Cooking SpRay
  • Eggcessories
  • Food Coolers
  • Knives
  • Napkins
  • Oven Mitts
  • Paper Plates
  • Paper Towels
  • Plastic Utensils
  • Smoking Wood
  • Seasonings
  • Tables
  • Tablecloths
  • Toothpicks
  • Thermometer

Eggchef Cooking Rules

Eggcessories will not be provided, but are available for EggChefs to purchase. We encourage you to shop early the day of, as we could find ourselves sold out.

What We Will Provide

We're here to help! We will have staff available to assist you with unloading & moving your supplies to your egg.
We will provide, monitor, and empty trash cans constantly!
Beverages of water and soda will be provided.
NO ALCOHOL PERMITTED.

Times

7 - 7:30 AM - Setup
8:00 AM - Lighting of Eggs
1:45 Pm - Shut down
